As James_Bertolli said it, simply use a homing attack to go back to the goal ring. Do a flight accel on the (invisible) ground to take the balloon. It's very easy without going behind the start.

How did I get those 2 rings above the balloon after the end ?! I don't know (and understand) what happened and how I got them. I took screenshots for proof if needed.
